Cooking and Dancing Make a Good Pair

I try to be creative with what to cook for dinner every chance I get. Tonight it’s chicken chipotle, cilantro rice, and guacamole.

Sharing my recipe for the tonight’s dinner:

Chicken Chipotle: make a flavor rub using tomato paste, blended onion and garlic (I used a food processor here to get the juices of the onion), oregano powder, garlic powder, chili powder, smoked paprika, salt and pepper. Marinade chicken in this flavor rub for at least 3 hours. Cook in pan or air fryer.

Cilantro Rice: Saute garlic and cilantro stalk. Add the rice and season with salt, pepper, and lime zest. Add half of the juice of the lemon. Remove from the heat and mix cilantro leaves in

Guacamole: Avocado, Onion, Lime, Salt, Chili Flakes

Our whole living area smells so good. As I’m cooking I’m also dancing to the beat of Earl Klugh’s record playing in the background. Thankful for days like this.
